Overnight Oats: Two Ways

One of my favourite breakfasts at the moment are overnight oats. They are the perfect meal prep recipe and loaded with protein and fibre.

You can make these so many different ways depending on the flavours you like. My two favourites are Chocolate Fudge Brownie and Banana Bread Oats.

Starting off your day with a high protein recipe is a great tool for blood sugar management, weight loss and sustaining energy throughout the day.

Chocolate Fudge Brownie Overnight Oats

- 1/2 cup rolled oats

- 3/4 cup of coconut milk

- 1 scoop collagen

- 1 scoop protein powder

- 1/2 TBSP cocoa powder

- 1 TBSP hemp hearts

- Sprinkle of cocoa nibs

- honey to taste

Banana Bread Overnight Oats

- 3/4 cup of coconut milk

- 1 scoop collagen

- 1 scoop protein powder

- 1 TBSP hemp hearts

- 1 TBSP ground flax seed

- Sprinkle of cinnamon

- 1/4 - 1/2 banana

- Handful of chopped walnuts

Instructions:

- Combine all ingredients into jars and stir or shake until well combined. Store in the fridge overnight.

- Eat straight out of the fridge

- If you want to have it warm, add to a pot and add a 1/4 cup of coconut milk and heat thoroughly

I usually prepare 3 or 4 at a time and keep them in the fridge until for up to 5 days.
